This pumpkin and courgette curry is the perfect warming dish after an Autumn day. It’s a delicious vegetarian choice using seasonal vegetables for a tasty treat.

Ingredients

1 pumpkin, diced
1 courgette, diced
2 tbsp ginger paste
2 tbsp garlic paste
2 tbsp oil
1 onion, diced
1 tsp garam masala
1 tsp chilli powder
1 tsp ground cumin
1 tsp mustard seeds
2 red chillies
Coriander to serve

Method

  • Heat the oil in a large saucepan, and add the onion, garlic paste, ginger paste, and ginger paste. Lightly fry until the onion is translucent
  • Add the garam masala, chilli powder, ground cumin, and mustard seeds. Fry for 1 minute until the spices are fragrant
  • Add the pumpkin and courgette with 100ml water and the chillies
  • Cover the saucepan with a lid and cook on low for 30 minutes
  • When the pumpkin and courgette are soft and the water is all absorbed, take off the heat
  • Serve with a sprinkle of coriander
